Ingredients

  • 2 whole doradas, cleaned and scaled

  • 2 cloves garlic, sliced

  • 1 lemon, sliced

  • 2 sprigs fresh rosemary or thyme

  • Olive oil

  • Salt & pepper

Instructions

  • Preheat oven to 200 °C (390 °F).

  • Rinse and pat dry the fish. Score the skin lightly on both sides.

  • Season inside and out with salt, pepper, and a drizzle of olive oil.

  • Stuff cavity with garlic, lemon slices, and herbs.

  • Place fish on a baking tray lined with parchment, drizzle more olive oil.

  • Bake 20–25 min, until flesh is opaque and flakes easily.

  • Serve with extra lemon wedges.
